Carrots were voted Australia's favorite vegetable. Apparently this was surprising to many Aussies out there, but not to me. I l.o.v.e. carrots. They are delicious, versatile, nutrition packed, and cheap.

When I saw this recipe on epicurious and it was voted as one of the best cakes, I knew I had to try it.

It started out with some basic substitutions:

1. We only had half of the macadamia nuts the recipe called for on hand, so walnuts were introduced

2. I only have 8" pans, not 9" as recommended.

Chopping, shredding, beating and some washing up later. The recipe went well with no big challenges.

Out came three cakes that had good shape, making it great for stacking and icing - fantastic.

The problem here was 8" inches wasn't big enough. This resulted with three layers stacking ridiculously high. Even the Cheesecake Factory would be jealous. Defeated knowing that there is no way one could put this in their mouth, I had to trim about2 2cm off each layer.

Eventually, we still had a tall cake ... but a more attainable sweet tower of moist goodness.

Would recommend trying it.
